After reading and enjoying a good meal, why not travel to Hainan? The tropical island of China with white sandy beaches, turquoise sea and waving palms beckoning you to come and visit. “China’s southernmost province, an allure that is increasingly known worldwide as it is set to become an international tourist destination.” Source: China Daily

The island is located in the South China Sea near Vietnam. It has not always been such a commercial and busy island. Tucked away behind the vast country mountains, this island has long been hidden for tourism. Han Chinese already built villages around 200 BC. But the Li population was only discovered in the 1930s.

Hainan is also called ‘Tail of the Dragon.’ Money is not the problem, like many popular areas in China. The developments go here with the speed of light. The island has a speed rail that allows you to move, although we find that bikes are still the best option.

For making Hainan Chicken Rice recipe click on the link. Buy fresh pandan leaves at Chinese supermarkets or frozen packages, if none available you can substitute with spring onion or young leeks. To handle the leaves for stuffing and cooking, tie 3-4 leaves into a knot as shown in the image here below.

For us a distinct Hainan Chicken Rice flavour is steeping the stock with Pandan leaves, it enhances unique fragrance. My home recipe for Singaporean style how to teach my kids to cook this dish. Stuff cavity with whole garlic cloves, ginger slices followed by the pandan knots. This will prevent the stuffing from falling out and locks everything in for great aroma development.

Tie up the chicken legs, so it is easier to lift and lower the chickens into the stock.

Tie up the chicken with the packaged food elastic or butcher’s twine.

Chicken prepared, marinating time will do its work blending the flavours.

Marinate chicken 6-8 hours or overnight

Transfer the chicken to a container and marinate the chicken in the fridge for 6-8 hours or overnight.

Prepare the aromatics for stock and rice

Fry the chicken fat add ginger, garlic, Chinese wine, light soy sauce, a dash of sesame oil. Fill the pan with 4 litres of water.

Bring to a rolling boil first, lower the chickens submerged in the liquid and turn the heat down to a simmer. With only a soft bubble on the surface, this manner is poaching the chickens.

Let the chicken poach in the stock for approximately 35-40 minutes, taste and add seasoning if needed. Put a lid on and turn off the heat. Let the chickens cool down in the poaching liquid

Method 1: Wash 6 cups of rice and cook in cooled poaching stock for a fragrant rice with a light aroma.

Method 2: Fry chicken fat in 2 tablespoons of oil together with the smashed garlic and ginger till its golden brown and fragrant. Add the rice, keep stirring coating all the rice kernels with a thin layer of chicken fat oil. Add the rice wine while it sizzles keeps mixing, as soon as you smell fragrance lifting up this signals to add the poaching liquid to cook the rice. At the end when you fluff up the rice remove the aromatics.

Method 3: Make a rice paste first, by pounding the chicken fat, ginger and garlic together with seasonings. Then fry the paste into 3-4 tablespoons of oil for 3-4 minutes releasing an aroma. Add the rice and mix to coat the rice. Pour the stock with pandan leaves to cook till the rice is ready.

Of all three methods, the rice paste will be fully absorbed producing an intensified flavour to the chicken rice.

Lift the chicken up from the pan with the opening down to pour the cavity empty.

If you leave the skin on rub the chicken with ½-1 tablespoon sesame oil for extra aroma and a nice gloss. Fluff the rice pan and remove all the aromatics from the rice.

Cut off the chicken legs and remove the stuffing.

This way the cavity opened up more to take out the stuffing. Now remove off the chicken wings, cut away the backbone. And remove the chicken carcass by pulling it off the chicken meat.

Turn the breast, remove all the bones and cartilage, with the breasts up cut through the middle and slice it up in pieces.

Cut each breast horizontally lengthwise, making it thinner and easier to cut equal portions,

Chop the legs with a cleaver through the bone or debone first. Remove and discard wing tip, chop in equal pieces.

With all the cutting done, scoop the rice onto the plate add the garnish.

If at a restaurant or shop, sometimes you will be asked which meat cut

Place a combination of sliced chicken breast or chopped chicken wing or juicy leg onto the plate

Add condiments

Add condiments; dark soy sauce, chilli hot-sour sauce (and minced ginger sauce).

Chinese Navy 1st visit to The Netherlands

The 18th Escort Task Group of the Chinese Navy arrived today for the first time visiting the Kingdom of the Netherlands, from 26th to 30th January, 2015. The Escort Task Group, consisting of the amphibious transport dock Chang Baishan, the missile-frigate Yun Cheng and the replenishment ship Chaohu.

Deputy Chief of Defence Bekkering welcomed Rear Admiral Zhang Chuanshu, deputy chief of staff of the South China Sea Fleet of the Chinese People’s Liberation Army Navy and commanding officer of the 18th Chinese naval escort fleet. In his speech he expressed great importance to deepen mutual understanding and cooperation with the Dutch Navy, and to further enhance the friendship between the two countries as well as the two navies.

During the welcome ceremony the orchestra of the Royal Navy performed, attended by 400 Dutch-Chinese, Dutch- based and overseas students living in the Netherlands. The Chinese crew will visit Mayor Aboutaleb of Rotterdam, during their stay they will speak with Dutch colleagues to exchange experiences. After their 4 day stay, the ships will leave the Port of Rotterdam and proceed their trip to France, Britain and Germany.

A very special occasion which attracted a big crowd on their arrival day, since it was open for Chinese visitors and later on for the Dutch public on Wednesday 28th of February. After the Welcome speech the attendees were invited to come on board. While a rain shower relentlessly came down, nobody gave up the rare opportunity to take their turn to visit the amphibious transport dock Chang Baishan.

Lanzhou La Mian Rap and Eat

Spontaneous post on the famous Lanzhou La Mian hand pulled noodles; which is a type of noodle made by stretching, folding and twisting the dough in strands. The subsequent stretching and twisting by the weight of the dough, followed by the number of times the dough gets folded and stretched, this will make the strands of noodles in various lengths and thickness.

The post idea was initiated by a tweet from Gary Soup on our @Asianfoodtrail twitter feed sharing an older post from his blog; the Full Noodle Frontity archives: The Rap on Lanzhou La Mian  For Chinese language speakers and language students, entertaining and funny to watch a modern praise on a famous traditional noodle dish. “A rap song about Lanzhou La Mian, by Gansu rapper Gao Xi, as a tribute to his iconic hometown speciality.” Unfortunately, I was unable to embed the rap song video, but you can click on the provided link at the bottom of the cartoon image below to watch the rap in your browser or view in the blog link post here above.

Since we are on this noodle topic, for those who might wonder what is Lanzhou noodle, La Mian – freshly made hand pulled noodles. Click on the Youtube video here to watch two kinds of noodle making; the knife shaved noodles and famous hand-pulled beef noodles served in clear broth from start to slurp.

My kids are like me huge noodle fans any-style, beef noodle broths and beef noodle soups are highly ranked on our family favourites of comfort food dishes. I promised to write down my recipes for them. 2015 Taiwan hot springs and fine cuisine

Having lived in TienMu, Peitou and TanShui, the nearby Hot Springs were frequently visited by our family. It’s one of my most favorite discoveries while living and enjoying Taiwan. Just stumbled upon this article about Taiwan’s 8th Hot Spring and Fine Cuisine Carnival.

Especially at this time of the year when temperatures begin to drop, not only the locals but also overseas tourists visit Taiwan specifically for the hot-spring spots. As the eighth Taiwan Hot Spring and Fine-Cuisine Carnival 台灣好湯溫泉美食嘉年華, organized by the Tourism Bureau, Ministry of Transportation and Communications 交通部觀光局, recently kicked off in Hsinchu 新竹, many are anticipating the ultimate pleasure of soaking in natural springs while having a bite of fine gourmet food.

Find Your Type of Spring

Several kinds of thermal springs can be found throughout the island due to Taiwan’s geographic location, including sodium carbonate springs (碳酸泉), sulfur springs (硫磺泉), salt or hydrogen sulfide springs (食鹽泉), sodium hydrogen carbonate springs (碳酸氫鈉泉) and neutral springs (中性泉).

With relatively lower temperatures than other types of springs, sodium carbonate springs are said to be less risky for those who have heart disease or high blood pressure. Guguang hot springs (谷關溫泉) in Taichung (台中), for instance, are famous for this type of spring. Taipei, Yangmingshan (陽明山) and Beitou (北投) are the two most well-known spots for sulfur springs that are milky white in color and feature a peculiar smell, and they are said to be effective in healing chronic skin diseases.

As for the colorless salt spring waters, they are said to be able to help improve poor blood circulation as well as ease lower back pain. Sodium hydrogen carbonate springs are good for moisturizing, softening skin cuticles and even smoothing scars; they are especially popular among women and can be found in Wulai (烏來), Jiaoxi (礁溪) and Zhiben (知本). Last but not least, the neutral springs are colorless and without any smell, making them suitable for the elderly.

Vietnam Paper Flower Art revived, always interesting to learn about an old craft anew and share about Vietnamese Lifestyle and Culture.

Thanh Tien Village switched from growing real flowers to making artificial ones three centuries ago, but the craft disappeared for almost 50 years. Phuoc Buu tells the story of a remarkable revival of the art and in the fortunes of those who revived it.

Elders in Thanh Tien usually shake their heads in some puzzlement as they tell the story of how their village became famous for making paper flowers.

For them, it is a tale with surprising twists and turns, but they are more confident now that an art they acquired over hundreds of years can have a stable future.

The story begins in the 16th century with the founding of the village on a stretch of land along the Huong (Perfume) river in the lower part of Hue.

Piri Piri chicken, baked potatoes & zucchini

With all the rain last week, cold wind and gloomy faces outside, it sure is time for comfort food. Had 3 large chicken legs, cut into parts and rubbed with Piri Piri spice mix then set it aside to marinate. Half of the time when cooking I whiz up the dishes without thinking too much, even when I am experimenting I should write it down immediately not to forget even to photo record the little tweaks.

Cooking with a camera in the kitchen, nearly broke the damn thing because it almost slipped off the counter. Or had to throw away cooking attempts because it burned while being distracted with other devices not being cooking utensils. Ever since the smartphone arrived featuring 5 or higher megapixels camera, combined with options for HDR settings I have become a die-hard fan. Using mobile photography as long as I don’t forget to pick it up and make shots in between. It is also the main reason why I am searching for photo apps as an amateur to make better photography shots of ingredients, dishes and fun things.

A while back I wrote a post about new photo video app, referring to Everlapse an iPhone app with PC version, well Flipagram is a newer app free download for iPhone, Android and Windows version. I have started using this app and become a fan, am really pleased with the results. While the photo video story below has an intense glow, it’s not because I used a filter but they were made in the kitchen at dinner time with only kitchen lightening hence the slight distortion.

In the kitchen busy cooking, background music entered the kitchen from the living room playing fittingly “I just wanna make you smile”. Now you know how this little photo video story came together. You can find the recipe here under attached to this post.

Thai red curry mussels, stir-fried & steamed

Easy week meal, quick, healthy and tasty shellfish in a velvety Thai red curry sauce. In the fridge, I had a container of 2 kg fresh mussels which I transferred into a big bowl to soak/rinse the mussels in water plus 2 tablespoons of salt. The mussels breathe, filtering water and expelling sand. I always take a few hours to soak and change water, by doing so the beard will come loose or a lot easier to remove and the sand sinks to the bottom. The changing of water in between soaks will prevent pouring accidentally sand into the cooking vessel.

Having prepared the main ingredient in advance I was contemplating between French style Moules Mariniere or Belgian style, although I have to admit at times I get confused in discussion regarding ingredients and distinction between the two. With or without cream, wine, herbs, flour etc. Recently I discovered a recipe where I noticed for the first time mentioning ‘Trappist bier’  in Moules à la bière recipe, mussels cooked with Belgian beer of course.

Alas, no beers but Pilsner (Lager) so skipped that for another night and since the weather changed, I opted for a bit of heat and spice instead. However, was missing a few ingredients, in that case you make do with what is available at hand. I had ran out of coconut cream and coconut milk, so I replaced that by  using coconut oil and a small packet of Alpro soya cream which was given as a sample. The alternative recipe is as shown with this post photo images, but for authenticity I will mention at the bottom how to cook using fresh herbs as lemon grass, coriander etc that would have complemented the Thai flavor and as decoration (chili too for heat and color).

Improvising with a few ingredients I came up with a bit of heat and spice making it flavorful and nice 🙂

Coconut cream or milk would be preferred for taste and flavor, but soy cream was a good alternative ingredient to thicken the sauce slightly (soy milk is not an option!). If you don’t have palm sugar, regular white sugar works fine. At the background you just can see the bottle of oyster sauce (works as substitute), which I didn’t use, what is missing in this image is Thai fish sauce.

Heat coconut oil, add red curry paste and stir-fry quickly, to mix and release flavors

Add the leeks, soy cream and stir till it starts to boil.

For a change I flat out had no herbs in my kitchen (no ginger, no galangal, no lemongrass even shallots were finished) so I used finely sliced leek instead. If you do have the aforementioned ingredients than chop it up finely, heat the oil in the wok add the ingredients and when it releases aromas add the red curry paste. Give everything a good stir than add the coconut milk to bind it all together, while rinsing off the mussels in a sieve , let it drip off all the excess water, add them into the wok. Put the lid on and let it cook steam for approximately 7-8 minutes till all shells have opened while giving it two good shakes in between. When done open the lid and tadaa! Stir around the sauce so it coats all the mussels. Wholladuh goodness,Thai red curry mussels, stir-fry & steam ! If you happen to have coriander at hand, chop a handful and scatter on top add finely sliced red pepper for color and a bit of fresh heat.

Cooking with fresh herb ingredients only intensifies the flavors, but even with the minimum I had this time it still was a great dinner. Serve on a plate with plain Jasmine rice and enjoy your Thai infused mussels.
