Seafood and fish benefits a healthy diet

Welcomed by a blazing sun on Sunday it ignited planning a trip to the beach. We never passed beyond that first thought. Absentmindedly sweeping up our backyard and trimming by pulling and snipping into the wiry Ivy. We ended up stripping down almost twenty years of Ivy growth against the garden wall.

After hours of manual labour, pulling and cutting the Ivy stalks we managed to get rid the Bush. Simple trimming turned out to be a heck of a job.

 

 

Going to the seaside was not an option anymore nearing the end of the day. Instead, we had a seafood salad mix as part of a healthy Keto (Paleo or LCHF) diet. Eating fish and seafood happens to be perfect with weight loss plan too.

We like to eat and prepare the fish whole from head to tail, fish types e.g. red snapper, mackerel, sardine, red mullet, sea bream, and more. Or sample fresh seafood like cuttlefish, clams, mussels, prawns, scallops and oysters.

You might have guessed, Fruits du Mer or Seafood platter is one of my favourite dishes. The presentation combined with flavour, texture it will take more time in advance for preparation.

Instead, it is easier to have a salad with fresh, canned and frozen items for a quick formed meal. Eating more seafood and fish in our weekly meal plan are healthy choices, in fact, it is low-fat, high in protein and rich in omega-3 fatty acids.


The good omega-3 fatty acids have shown to reduce triglycerides, blood pressure and inflammation. I have been reading on the benefits for a healthy diet due to reversing diabetes Type 2 while following Keto diet with very good results.

Hunting season has begun with an abundance of local Wild Game choice; Hare, Pheasant, Goose, Deer and Wild boar to name a few. Since I returned home I haven’t had the chance to try on Wild Game cooking. The occasion did not present itself till recently, to buy Wild Game and fowl directly from a hunter-gatherers group. Almost two weeks ago I picked up a Wild Rabbit or Hare, already butchered in parts; front legs, back legs and saddle at my request. Otherwise, I would have to skin, gut, debone and butchering it myself well that is just too much 麻烦 ’mafan’ or trouble since I only could prepare it the next day.

For this dish, you can use the whole Rabbit or Hare saddle rack by chopping it up in pieces or cut out the loins and then cut at an angle in fine slices. After I had posted my photos I received questions how I deboned the Hare. Instead of writing out that process I found a good instructional video to watch. Newbies to deboning might find this to be helpful improving their technique and make this dish as a next meal.

Sichuan is one of the popular cuisines in China and has set ground in Europe with a growing group of gourmets aficionados, its famously know because of their hot spicy taste and the flavour of numbing Sichuan pepper (aka Mala Wei 麻辣未). However it is actually a variety of flavours combined together; spicy, salty, sour, sweet, bitter, smokey and flowery (Sichuan peppercorns). It is not rare that you will find all of these flavours in one dish.

A variety of seasonings are used in Chuan Cuisine, and each dish can be cooked differently. Therefore Chuan Cuisine enjoys a reputation for variety. As the saying goes it’s ‘one dish with one flavor and one hundred dishes with one hundred flavors‘.

Ma Po Doufu, Kung Pao Chicken, Yu Xiang Rou, are favourites in and outside of China, next to the common and exotic ingredients are wild game dishes, in all Chinese cuisines and all over south-east Asia. This realisation came to me after the huge response I had on my post with the request to share my recipe.

Now you might have an idea what you are preparing to taste, eating spicy and hot will never be the same. Since it was a trial cooking with Hare meat I have not taken any photo shots during preparation or cooking, these will be added later. Who would have guessed at a food swap, having a great coffee talk I would end up joining wild game groups on the net and near the woods (no I don’t hunt). My curiosity has introduced me to otherwise unknown wild game gourmets of cooks and hunters.

It didn’t take too long to buy a fresh wild rabbit/hare directly from a hunter and before I arrived home I decided to prepare Sichuan style version. With the infamous dried peppers ‘Hua jiao‘ 花椒粒 and ‘La jiao’ 辣椒乾 (literal translation is flower pepper kernels and dried Sichuan chilli).

Both are very distinctive spices not easily replaced if you want to add a particular heat and aroma.

These ingredients are not common in supermarkets or deli stores. I have added the images for recognition. So you know what to search for at the Chinese supermarkets or Asian Toko’s.

Homemade Sichuan hot chilli oil is an infused aromatic oil, made of grounded Sichuan chilli peppers (la jiao) and flower pepper (Hua jiao) to flavour the oil together with other spices. Used as a finish in many stir-fries, swirled on top of noodle soups and an integral part in marinades for spicy appetisers.

A part of my last batch ended up as food gifts so I need to refill and stock up my own pantry soon. Making the oil is not for the fainthearted because using and stir-frying peppers will release a very pungent sensation and can irritate the skin and eyes.

Conveniently store bought works as well, you can find these at the supermarkets/Toko’s. Shop for the standard Chilli oil look for an aromatic Sichuan version on the shelf.

As with buying sesame oil, for advanced gourmet sleuths, they enjoy cooking with various oils for blending or cooking purposes. Buy small bottles once open use it quickly or it can turn rancid. Note of caution, sesame oil is not intended for frying, but only quick sauté for example to fragrance a dressing or sauce at the end of cooking.

Spicy Hare or Rabbit in Chinese Food Therapy

In my childhood rabbit meat was a staple ingredient and prepared by my parents in many dishes; stir-fries, stews, and herbal soups often paired with traditional Chinese medicine. The latter to make a tonic with the purpose of strengthening and nourishing the body. Cooking with Chinese herbs is about recuperating the body and rabbit meat is well known for its high protein content.

In Chinese dietic therapy; “According to TCM food, like medicine can be divided into the characteristics cold-hot-cool-warm. When applied correctly nutritional ingredients can help the patient to overcome an inclination to or even a manifested disease. Food used to aid and act as preventive part of a nourishing diet can achieve the same goal to strengthen recovery process”.

Rabbit or Hare meat is considered foods with warming qualities, high protein level and the temperature was cold. The more reason altogether to add spice in this wild game stir-fry dish bringing it all in balance.

A few days later I posted food pics of my Sichuan style cooked spicy hare dish just for fun between all other social media posts. The food pics picked up attention with a request to share the recipe and preparation method. Instead of a wild rabbit, hare, you can make this dish with other meats as well, for e.g. lamb would be very nice with the peppers, capsicum, and daikon (rettich/white carrot or aka daikon).

Chinese style braised oxtail bones – recipe

Chinese style braised oxtail bones are served as a topping on rice or served separately in a wide bowl. Vegetables as carrots and cassava are added making this dish a hearty and flavoursome nutritious dish. Paleo fans will enjoy its warming earthiness as much without any gluten ingredients. Interchanging between a variety of bean sauces (Chinese fermented soybean sauces), chilli paste and spices will allow you to play with an aroma to your own liking. Or be adventurous and choose to cook from other south-east Asian cuisines enjoying the different flavour, texture with salivating fragrances.

Serve in a bowl by itself with rice or noodles on the side, or topped above as a one-dish meal for lunch or dinner. As a main dish, if preparing a menu for more persons, I would suggest adding a vegetable- and doufu dish with a light soup to complement each other. Difference between braise, stews and soup – Update 21 December 2015

I received engaging comments with the questions, how much liquid to add. Followed by the difference between braising and stews. In answer to my readers,  I am updating the post with the replied information on the method of cooking techniques used for tougher cuts of meat.

To start with the liquid in any recipe, it focuses on the right volume to add, water, stock or broth. Next, the cut size of the meat (small cubes) and cutting against the grain means cutting crosswise through the long muscle fibres in the meat. Breaking them up makes meat more tender.

Often used cuts are the less tender and gelatinous parts of meat for slow cooking as well as the use of accompanying vegetables in the dish. In order to fuse all the ingredients together to melt into a tender and flavoursome dish, is by breaking down the connective tissue as tendons (collagen) just simmering it slowly using the right low temperature.

Braising and stewing cooking technique are combination cooking methods using the hob and/or oven.

  • Braising is cooking meat on a bed of vegetables in a small amount of liquid, utilising steam and stewing in its cooking process. At the end of the cooking process, the meat often falls off the bone and the concentrated gravy is clinging to the pieces of meat.
  • Stewing is a slow cook method, where the food is cut into smaller pieces and covered in liquid using gentle heat for a long time. Here the meat is fork tender and the liquid is reduced covering the meat pieces in an aromatic thick sauce.

Cooking with high pressure is perfect it doesn’t require a whole lot of liquid, making it perfect for braised dishes in my Instant Pot DUO 7-1 I use or Lux 6-1 (version without yoghurt option). In comparison with my stove high-pressure cooker, where you have to manually set the timer and keep an eye on it still. The IP has automated meat/stew 30 minutes program you just press and walk away, at the end of time cancel the keep warm function so the natural pressure release can come down a bit faster (approx. 30-45 min.).

For a braised result, I submerge the meat by adding water or stock just barely covering it exposing some of the bones and meat. If you would opt for only (e.g. 50%) using half of water or stock to add, be aware that the gravy will reduce significantly as well. Tip: Keep in mind if this dish is completely cooled the gravy of the bones will be very gelatinous (jiggly as jelly). Meat jelly is another Chinese delicacy served eating it cold as homecooked food and can be creatively used in appetisers or bun fillings for example.

If I like to make a stew instead, I will submerge the ingredients covering it to ½-1 inch (1 ½ – 3 cm) above with liquid or more if it calls for a soupy consistency.

 

Drink suggestions:

  • Tea leaves: Green tea or Jasmine tea is very common, but Pu Erh tea has an earthy smokiness which is very pleasant with an added bonus it really cuts the fat down in your body.
  • For the beer fans: You will enjoy this dish with a light beer, a darker beer, even more, tasteful. In The Netherlands seasonal draft beer or bottled bock beer would be nice to pair along, it has richer, sweeter lager with warm toasty undertones and minimal bitterness.   • As for wine lovers: A red Bordeaux is an easy choice, but for the adventurous wine sleuth, an Australian Shiraz-Viognier Barossa 2006 is a discovery I can recommend. My all time favourite would be the Chilean Tarapacca Carmenere, rich in berry fruits and spices to pair with my bowl of Chinese style braised oxtail bones. You will not believe it, but I made my acquaintance and fell in love with Tarapacca in Taipei. Of course, there are far more than one grape or bottle, the more reason to cook and pair more meals.

After reading and enjoying a good meal, why not travel to Hainan? The tropical island of China with white sandy beaches, turquoise sea and waving palms beckoning you to come and visit. “China’s southernmost province, an allure that is increasingly known worldwide as it is set to become an international tourist destination.” Source: China Daily

The island is located in the South China Sea near Vietnam. It has not always been such a commercial and busy island. Tucked away behind the vast country mountains, this island has long been hidden for tourism. Han Chinese already built villages around 200 BC. But the Li population was only discovered in the 1930s.

Hainan is also called ‘Tail of the Dragon.’ Money is not the problem, like many popular areas in China. The developments go here with the speed of light. The island has a speed rail that allows you to move, although we find that bikes are still the best option.

Thai red curry mussels, stir-fried & steamed

Easy week meal, quick, healthy and tasty shellfish in a velvety Thai red curry sauce. In the fridge, I had a container of 2 kg fresh mussels which I transferred into a big bowl to soak/rinse the mussels in water plus 2 tablespoons of salt. The mussels breathe, filtering water and expelling sand. I always take a few hours to soak and change water, by doing so the beard will come loose or a lot easier to remove and the sand sinks to the bottom. The changing of water in between soaks will prevent pouring accidentally sand into the cooking vessel.

Having prepared the main ingredient in advance I was contemplating between French style Moules Mariniere or Belgian style, although I have to admit at times I get confused in discussion regarding ingredients and distinction between the two. With or without cream, wine, herbs, flour etc. Recently I discovered a recipe where I noticed for the first time mentioning ‘Trappist bier’  in Moules à la bière recipe, mussels cooked with Belgian beer of course.

Alas, no beers but Pilsner (Lager) so skipped that for another night and since the weather changed, I opted for a bit of heat and spice instead. However, was missing a few ingredients, in that case you make do with what is available at hand. I had ran out of coconut cream and coconut milk, so I replaced that by  using coconut oil and a small packet of Alpro soya cream which was given as a sample. The alternative recipe is as shown with this post photo images, but for authenticity I will mention at the bottom how to cook using fresh herbs as lemon grass, coriander etc that would have complemented the Thai flavor and as decoration (chili too for heat and color).

Coconut cream or milk would be preferred for taste and flavor, but soy cream was a good alternative ingredient to thicken the sauce slightly (soy milk is not an option!). If you don’t have palm sugar, regular white sugar works fine. At the background you just can see the bottle of oyster sauce (works as substitute), which I didn’t use, what is missing in this image is Thai fish sauce.

For a change I flat out had no herbs in my kitchen (no ginger, no galangal, no lemongrass even shallots were finished) so I used finely sliced leek instead. If you do have the aforementioned ingredients than chop it up finely, heat the oil in the wok add the ingredients and when it releases aromas add the red curry paste. Give everything a good stir than add the coconut milk to bind it all together, while rinsing off the mussels in a sieve , let it drip off all the excess water, add them into the wok. Put the lid on and let it cook steam for approximately 7-8 minutes till all shells have opened while giving it two good shakes in between. When done open the lid and tadaa! Stir around the sauce so it coats all the mussels. Wholladuh goodness,Thai red curry mussels, stir-fry & steam ! If you happen to have coriander at hand, chop a handful and scatter on top add finely sliced red pepper for color and a bit of fresh heat.

Cooking with fresh herb ingredients only intensifies the flavors, but even with the minimum I had this time it still was a great dinner. Serve on a plate with plain Jasmine rice and enjoy your Thai infused mussels.

Blackbeans Jumble, our Monday night one-pot dinner creation influenced by Creole Jambalaya. The origin of Jambalaya apparently derives from the Provencal which is spoken in the South of France, the word “jambalaia” refers to a mishmash or mix-up. Talking about fusion, diversity and cooking, you definitely will find it in Creole cooking, this cuisine is a living proof of all the descendants of early settlers.

Louisiana Creole cuisine is recognized as a unique style of cooking, which makes use of the “Holy Trinity” (in this case, chopped celery, bell peppers, and onions), but has a great variety of European, French, Caribbean, African, and American influences.

Pulses and legumes

I love one-pot dishes, mixing ingredients and blending of spices they are ideal to finish up whatever vegetable is leftover on my kitchen counter. Adding pulses and legumes to your diet is very healthy since beans are considered protein-rich super food. Beans are low-glycemic, high-fiber, high-protein and packed with important vitamins, minerals and antioxidants. Not to mention very convenient to cook and to add to your weekly meal plan. Beans help you feel fuller for a longer period of time and as a bonus helps to lower your weight.

Double value for health and grocery shopping budget to buy dried beans instead of cans or jars, a bag of beans is very economic, because it triples in quantity. One dried cup yields 2½­- 3½­ cups soaked beans, enough to feed a family of 4-6 persons. Just soak a cup overnight (1-2 days max, refreshing water in between) to let them well double in size, transfer to a pressure cooker and depending the bean and quantity you only have to cook 7-10 min tops and the beans are ready to be used in dishes or as ingredient of a recipe. Digestion aid

Not everyone has the same experience but it is a well known side effect of eating beans resulting in flatulence, because beans contain raffinose which is a starch that is poorly digested due to a lack of the enzyme galactosidase. In aid to reduce increased intestinal gas production, there are several ways to avoid bean flatulence;

  1. Pre-soak overnight up to 24 hour, rinse in between (48 hours max otherwise it will ferment instead!) is a must and cook them well, the beans must be entirely soft without any hard bits.
  2. Add a knife tip – pinch of baking soda to the soak water of dried beans before cooking, this will significantly decreases the content of the raffinose family of sugars.
  3. From our time in India, were lentils are staple food we learned from Indian cooking to add asfoetida aka ‘hing’ as a digestive aid, this little tub is on our spice rack among Indian spices. In many Indian recipes it includes turmeric and ginger both are digestives spices as well.
  4. Other spices are cloves, cinnamon, and garlic are potent in reducing gas.
  5. According to a Huffington Post article, adding a piece of seaweed (Kombu or Wakame) will make the beans more digestible. Seaweed is another well known power food and it adds an extra depth as part of flavoring the beans as well aid for digestion 

Chili con Carne is a well known recipe with kidney or brown beans, Blackbeans Jumble is made with blackeyed beans and this recipe has creole influences but was mainly inspired by leftover greens, the use of spices like smoked paprika powder and cumin makes it interesting. You can add peppers if you like the heat or leave them out, by omitting the meat it will become a full vegan dish.

Flat beans are in season now for € 0,99 p/kg, fresh bright green, smooth skin, crunchy and string less, flat beans belong to the same group as runner beans. Flat beans here in The Netherlands/Europe are cooked, boiled or steamed, although I do not know many cooks who will use this unless they have a steamer appliance or steamer-oven otherwise too much hassle. My favorite way of cooking is stir-frying, the cutting up takes more time than cooking in a wok or saute pan/flatware.

Day before I had prepared fresh aubergines with SiChuan chilibean paste and I only needed half a package of ground pork meat, so I had some leftover ground meat to be used.

When I refer to soybean paste, I realized it can be confusing especially since I have 4 kinds of bean sauce. Three as shown in the picture above; the first one is a Taiwanese brand, the two glass jars Chinese and the fourth one missing is a Thai version (a photo will appear in another dish soon). Now for tonight’s dinner I only used bean sauce, the middle jar but if I would be cooking with chicken or dou fu I would mix bean and hot bean sauce together for an even stronger flavor.

To speed up cooking even more, you could zap the bean in the microwave for 5-7min (depending microwave power), we like a crunchier texture so never pass beyond 7 min otherwise even stir-frying will make them wilt even more. With cutting up the vegetables, cooking the rice (2-3pers) and stir-frying this dish dinner is served with 15- 20 minutes tops.

You can substitute flat beans for runner beans and make this a vegetarian dish by omitting ground meat, variation are endless. You can even create a spicier version by mixing both the bean and hot bean sauce or adding a chili paste to enhance spiciness and leave out the bean sauce entirely. This recipe gives you a base to mix and match and experiment further to create your dish.

Had plans for MaPo DouFu, but the minced meat was Lamb mince, slight adjustment and a dive into the cupboard and fridge to see what else was available. On the left two shiny aubergines, a jar with tiny dried bird’s eye chilli peppers, a quick look in the cupboard with jingling spice bottles. Two bell peppers from the vegetable drawer, asked hubby to snip a big hand of fresh parsley from our potted garden outside. Love Greek and Turkish cuisines and thought it would be a nice surprise after a few days of Asian dishes, with most of the ingredients at home it is easy to fuse flavours and mix with spices. Creating a new dish or cooking a flavour is most of the time not ingenuity but missing an ingredient which forces you to substitute in the hope it fuses and blends all well together. If it does happy faces at the table, if not it will be voted out not to be repeated. Luckily this dish is a keeper, easy to prepare and adapts with all most all vegetables even a spinach version turned out tasty, so go figure.

If you want an aubergine vegetarian version just omit the meat and cook the vegetables or you may add one can of chickpeas instead. After cooking and filling the eggplant shells, you will have more than enough stuffing left over to enjoy the next day either for lunch or dinner.

Variations we like for the next meal as lunch or dinner ideas are:

  • Wrap in a tortilla as a burrito with extra lettuce or with rice.
  • Grill Turkish/Moroccan bread/Ciabatta layer with lettuce and top with eggplant stuffing
  • If you don’t have time to wait and bake the potato, zapp the spud in the microwave on full, cut a cross and pull it open top the eggplant stuffing on top with a dollop of yoghurt.
  • or if you happen to have some hummus, lavash and other dips you can have it as a snack too.

Smashed potatoes with beets, bacon, garlic, onion & fennel seed

After visiting an entertaining seminar I biked home along with a late afternoon sun, but the temperature had dropped to 4°C and I was stone cold by the time I stepped into the house. Time to prep dinner quickly, hot with loads of carbs since everyone was dropping in hungry and on the run for sports night or other social activity.

In the fridge was a packet pre-cooked beets, bacon lardons and we needed a filling so big potatoes or ‘spuds’. A different take on a local Dutch dish “Bieten Stamppot”; Dutch stuff ( ingredients ) + American influence (smashed potatoes) + Chinese cooking (moi) = Smashed Beetspuds! 🙂

Beets are a unique source of phytonutrients called betalains. Betanin and vulgaxanthin are the two best-studied betalains from beets, and both have been shown to provide antioxidant, anti-inflammatory, and detoxification support. 

I am actually the only one who loves beets in our house and just telling they are highly nutritious root vegetables doesn’t cut it. You have to be inventive to balance the earthy ‘beets’ flavour into a nutritional and colourful dish. A Wednesday night hodgepodge, everything nice with sugar and spice with just a drop of balsamic vinegar and pinch of fennel seeds.

Instead of a pureé, opted  to ‘smash’ it and just give it a quick mix so it retains structure instead of a red pinkish mash-up. Unfortunately,the photo’s are not supporting my claim, but give the recipe a try I love to hear your comments or even better share your results send me a photo of your plate.
